Pea Salad With Pimentos and Cheese

This is a quick and easy - and tasty - recipe that was a standard at my extended family’s special dinners. Great Aunt Betty almost always brought this as a dish to pass, and it was always gone by the end of dinner.

Mix peas, pimento peppers, Colby cheese, onion, mayonnaise, salt, and black pepper together in a bowl with a lid. Cover and refrigerate for at least 12 hours before serving for best flavor; stir again before serving.
