Tasty Vegan Guacamole Sandwich

This vegan sandwich is delicious if you love guacamole (like I do) and are looking for something different for lunch. The layers stay together better when the sandwich is on a fresh roll. Serve with chips and salsa!



Step: 1

Layer avocado, tomato, cucumber, and red onion on the bottom half of the roll. Sprinkle with lemon juice, salt, and pepper. Place lettuce on top. Spread a thin layer of vegan mayonnaise onto the top half of the roll and place it on top of the sandwich.
